White chili
Ingredients
- 2 T vegetable oil
- 4 medium onions, chopped
- 4 cloves garlic, finely chopped
- 6 cups chicken broth
- 4 T chopped fresh cilantro
- 4 limes, juiced
- 2 t ground cumin
- 1 t dried oregano
- 1/2 t red pepper sauce
- 1/2 t salt
- 2 can corn, drained
- 2 can great northern beans, drained
- 2 can butter beans, drained
- 4 cups chopped (uncooked) chicken breast
Directions
- In a dutch oven, heat oil over medium heat. Cook onions and garlic in oil 4-6min until onions are tender.
- Stir in remaining ingredients except chicken. Heat to boiling, reduce heat. Simmer uncovered 20 minutes. Stir in chicken; simmer about 5 mins or until hot.
