Enchilada soup
Ingredients
- 1lb frozen chicken breasts
- 1 15 ounce can whole peeled tomatoes
- 1 can tomato sauce
- 1 10oz can enchilada sauce
- 1 medium onion, chopped
- 1 4oz can chopped green chile pepper
- 2 cloves garlic, miced
- frozen pepper strips
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 10oz package corn
- 1-2 can black beans, drained
Directions
- Throw everything in crockpot on low for 8 hours. Take out chicken, shred, and serve.
