Fried chicken
Ingredients
- Chicken, thinly sliced (full breast into halves or thirds)
- Brine
- 1 cups buttermilk
- 2/3T kosher salt
- 1T sugar
- Flour coating
- 3/4 cup flour
- 1/4 cup cornstarch
- 1T cayenne pepper
- 1 T black pepper
Directions
- Brine up to 8 hours; bad consistency if brined too long
- Milk (not brine!) -> flour coating -> milk -> flour coating
- Let sit for 10 minutes (reflour if wet)
- Fry in pan of oil
