Directions

  1. In a bowl, combine all marinade ingredients with chicken, refrigerate for 4 hours
  2. Heat 1 tablespoon olive oil in a large skillet or cast iron pan over high heat
  3. Remove chicken from marinade and cook chicken strips until browned and cooked through, about 5-7 minutes, remove from pan
  4. Reduce marinade down into a thickened sauce and add to cooked chicken
  5. Add remaining 1 tablespoon olive oil to the same pan
  6. Add peppers and onions, season with salt and pepper, cook until tender-crisp, combine with chicken
  7. Serve immediately
