Fajitas
Ingredients
Marinade
- Juice from 4 limes
- 1/4 cup of worchestershire
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons cumin
- 1 Tablespoon chili powder
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Fajitas
- 1.5 lbs chicken breast, sliced into strips or cubes
- 3 bell peppers (red, yellow, or green), sliced
- 2 large onion, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Serving
- Flour tortillas, warmed
- Sour cream
- Shredded cheese
- Cilantro
- Lime wedges
Directions
- In a bowl, combine all marinade ingredients with chicken, refrigerate for 4 hours
- Heat 1 tablespoon olive oil in a large skillet or cast iron pan over high heat
- Remove chicken from marinade and cook chicken strips until browned and cooked through, about 5-7 minutes, remove from pan
- Reduce marinade down into a thickened sauce and add to cooked chicken
- Add remaining 1 tablespoon olive oil to the same pan
- Add peppers and onions, season with salt and pepper, cook until tender-crisp, combine with chicken
- Serve immediately
